Gluten Free Pressure Cooker Mashed Potatoes

Ingredients

  • 1 tablespoon of olive oil

  • Couple tablespoons of minced garlic

  • 1 cup of your broth of choice

  • 1 bad of small potatoes

  • 1/2 cup of heavy cream

  • 2 tablespoons of butter

  • Salt and Pepper to taste

Directions

  1. In a pressure cooker, add 1 tablespoon of olive oil and sauté the minced garlic for about a minute.

  2. Add 1 cup of broth and scrape the bottom of the pressure cooker, making sure to get any bits that might have remained stuck.

  3. Quarter the potatoes and add them to the pressure cooker.

  4. Pressure cook on high for 8 minutes and naturally release for 8 minutes.

  5. Remove the lid of the pressure cooker and add 1/2 cup of heavy cream and a few tablespoons of butter.

  6. Mash until you get the consistency you want.

  7. Add salt and pepper to taste.
