Gluten Free Quinoa Veggie Bowl
Ingredients
1 cup cooked quinoa
½ cup roasted vegetables
¼ cup chickpeas
1 tbsp olive oil
1 tbsp lemon juice
Directions
In a bowl, combine quinoa, vegetables, and chickpeas.
Drizzle with olive oil and lemon juice.
Toss to combine and season with salt and pepper.
Serve warm or chilled.
